Fajita Frittata

This Fajita Frittata is gluten-free and dairy-free. However, if that is not important to your family, please change up the ingredients to fit your family! The flavors are fantastic, and it is an effortless meal to prepare. We like to serve this with a bit of guacamole and salsa.





Start by preheating the oven to 450 degrees. Coat the bottom of your pie dish with a bit of avocado oil. Next, spread the TJs Sweet Potato Ribbons along the bottom of the pie dish. Drizzle some oil over the sweet potato ribbons and season with TJs Chili Lime Seasoning Blend. Place the dish in the oven and let the sweet potatoes brown for about 10 minutes until slightly crispy.







While the crust is roasting, mix your frittata ingredients. Shred your TJs Carnitas and set aside. Whisk 6 eggs in a large bowl and season with salt and pepper. Add 1 cup of TJs Fire Roasted Bell Peppers and Onions, 3/4s of your Carnitas package, and 1/2 TJs Dairy Free Shredded Parmesan Cheese Alternative and fold in to combine.





Once the crust is browned, pour in your frittata mixture over the sweet potato crust and turn the oven down to 400 degrees. Bake for approximately 20 minutes. Serve the frittata sliced like a pie!

3/4 Package of TJs Carnitas (shredded)

Approximately half a container of TJs Sweet Potato Ribbons

Avocado Oil (for coating the pan and a little drizzle on the sweet potatoes.)

TJs Chili Lime Seasoning Blend (to taste)

1 cup of thawed TJs Fire Roasted Bell Peppers and Onions

1/2 cup of TJs Dairy Free Shredded Parmesan Cheese Alternative

Salt and Pepper or taste
