Gluten and Dairy Free Easy Beef Stroganoff

Beef Stroganoff is a dish that my family loves. However, when made traditionally, not only does it not work with my stomach, but the preparation is just not something we have time for on an average day. With a few adjustments, this fan-favorite fits our schedule and our dietary restrictions. Now, some of you may say, "there is no way my family will eat something with coconut cream!" But, go ahead and ask my coconut-loathing husband if the coconut flavor is detectable, and he will reassure you that it is not!! This dinner also tastes slow-cooked when in reality, you will have it on the table in less than 30!!

Start by opening up your All Natural Shaved Beef Steak and let it rest at room temperature. Then get a large stockpot heating up on high. Add about 2 teaspoons of avocado oil to the pot. Once the pot is hot, drop the shaved steak slices in individually. Try to give them as much room as possible to cook evenly. These will cook very fast, so keep an eye on them and flip as necessary.

Add in your garlic (1 cube) and TJs Everyday seasoning (1 tablespoon) when the meat is browned. Once the seasoning is incorporated, add in your Worcestershire (1 tablespoon) and mustard (1 tablespoon) and stir. Then add in your container of Sliced Baby Bella Mushrooms.

While the mushrooms are cooking and turning golden in color, get your rice or pasta cooking. My family prefers this over noodles, and we like the TJs Gluten-Free Egg Noodles. However, I also like this over steamed TJs Organic Jasmine Rice. (If you are attempting to eat lower carbs, skip this step and check out my image below.)

Once the mushrooms are golden, add in your stock (1 cup). I had chicken stock available on this particular day, although beef and vegetable stock are also usable options! Allow this dish to simmer and reduce slightly. About 5 minutes will do it!

Finally, it will be time to add in the coconut cream right before serving. Only use the solid "cream" part of the coconut cream.

Stir to allow the cream to become one with the stroganoff! Then it is time to plate. On this particular day, my family all wanted noodles. On the other hand, I was craving something a bit healthier, so I ate mine on a bed of baby spinach. There is an option for everyone here!

Plus, if you do not want a dairy-free option but still want to be health-conscious, use the TJs whole milk plain Greek yogurt instead of the coconut cream. It has the same tang as sour cream with very little lactose yet a lot of protein!!
