Greek Gyro Frittata




Oppa! This easy frittata will have you ready to sail the Mediterranean without the travel requirements. This frittata is full of flavor and can be customized to your own dietary desires and restrictions. Not only is it delicious but it's also beautiful when plated up with Trader Joe’s Avocado Tzatziki!


Preheat your oven to 450 degrees and spray your pie dish with your non-stick spray of choice. I personally like the avocado oil sprayer. Then, line the bottom of the dish with your Sweet Potato Ribbons. (If you prefer a white potato flavor, use the frozen Trader Joe’s hashbrowns in place of the sweet potato ribbons.) Then spray a light but even coat of Avocado Oil Spray on the potatoes and evenly grind Everyday Seasoning over the top. Place this in the oven and let it roast and crisp for 10-15 minutes or until the edges start to crisp and brown.




While the crust is roasting, whisk together six large eggs in a bowl. Add to these eggs the crumbled gyro meat (if you are completely gluten-free try adding the sundried tomato chicken sausage instead), one cup of chopped artichoke hearts, a container of Goat Cheese or Crumbled Feta with Mediterranean Herbs (leave out if completely dairy free or add the Dairy Free Mozzarella Style Shreds Cashew Cheese Alternative), ¼ cup of Red Pepper Spread and 1 teaspoon Everyday Seasoning. Whisk all ingredients until everything is evenly distributed.

Once your sweet potato base is starting to crisp, pull it out of the oven and adjust the oven temperature to 375 degrees. Pour your egg mixture over the base and put it back in the oven to bake for 50 minutes.


Once your beautiful frittata comes out of the oven, slice it like a pie and top with Avocado Tzatziki.


1 container of Sweet Potato Ribbons

1 ½ teaspoons of Everyday Seasoning (divided)

Avocado Oil Spray

6 large eggs

1 box of Gyro Slices crumbled

1 cup chopped Artichokes

1 container of Crumbled Goat Cheese or Crumbled Feta with Mediterranean Herbs

¼ cup of Red Pepper Spread
