Hearty Sausage and Chimichurri Rice Soup

It is finally soup season and I couldn't be more excited. This Hearty Sausage and Chimichurri Rice Soup is a soup that will definitely fill you up and keep you satisfied! Plus, it really couldn't be any easier but fair warning, this one is not dairy-free. This "heat you from the inside" soup is literally just slice, dump and heat and you will have a delicious soup that tastes like it cooked all day.

Start by thinly slicing up your package of TJs Sundried Tomato Chicken Sausage. Then, heat your large stock pot to high heat. Toss in the sliced sausages and brown all the pieces.

Once they are browned, pour in your frozen TJs Peruvian Style Chimichurri Rice and stir. Once the rice is broken up and combined, pour in your carton of TJs Roasted Red Pepper and Tomato Soup. Heat the soup thoroughly and stir periodically.

Once the soup is fully heated (approximately 5-10 minutes), ladle into bowls. We like to top the soup with a sliced, halved avocado and a dollop of TJs Organic Whole Milk Greek Yogurt. The pictures show a double-batch as we like to have leftovers but one recipe is plenty for 4!!

1 carton TJs Organic Tomato and Roasted Red Pepper Soup

1 bag of TJs Peruvian Style Chimichurri Rice With Vegetables

1 package of TJs Sun-Dried Tomato with Basil and Tomatoes Chicken Sausage Sliced

Optional: Avocado and TJs Whole Milk Plain Greek Yogurt (or Sour Cream)
