Low Carb Steak and "Potatoes"

Who doesn't love a traditional "meat and potato" dinner? Unfortunately, many of us don't need the carbs included in a typical russet potato. Nor do we have the time to make steaks and potatoes on a weeknight after work, kids practices, and tending to homework! Like most everything I post on Momma Joe's, this dinner is quick, easy, and full of plenty of flavors. By using the TJs shaved steak, you can have oven-roasted steak in around 5 minutes!!




First, the avocado chimichurri that I topped the steak with can be made ahead of time, so if you know that you will be short on time, make it in the morning or anytime you have an extra 10 minutes. The avocado chimichurri recipe and instructions are here.





Next, preheat the oven to 400 degrees and get a large sheet pan, a medium-sized pot, and a sauté pan out. Spread your TJs shaved steak out on the sheet pan and thoroughly season with TJs Everyday Seasoning. Be sure to give the meat enough room. Use two pans if necessary. Let this pan rest, and let the meat come to room temperature while you get your mashed cauliflower and mushrooms ready.




Prepare the TJs mashed cauliflower via the package instructions, although substitute chicken stock instead of water and add a tablespoon of butter.




Then get two teaspoons of oil in your sauté pan, I used butter, although olive oil works great here.




Then add your mushrooms and toss to ensure all mushrooms are evenly coated.

Sauté until golden brown. I was having a glass of wine this evening, so I had a bottle of red wine nearby, so I added about two tablespoons of red wine.




If you don't have any open wine, don't fret; just skip this step, although it does add great depth and flavor. Finally, add 1-2 teaspoons of TJs Everyday seasoning to the golden mushrooms.



While the mushrooms are sautéing, place your seasoned steak in your preheated oven. The meat is so thin that it will not take very long to cook, so don't go far! My family prefers steak relatively well done, so I allowed the meat to cook for about 5 minutes. However, if you can convince your family to eat meat that is less done, pull the meat out after about 3 minutes. Basically, just cook it to your family's preference!


When the meat is finished cooking, it is time to plate. I like to add a large helping of mashed cauliflower to the plate, line it will some sautéed mushrooms, and then add some steak. Then top the steak with some avocado chimichurri and enjoy!!





Low Carb Steak and "Potatoes"

1 package of TJs All Natural Shaved Beef Steak (my family opted for 2, but we were very hungry and still had leftovers)

2 packages of TJs frozen Mashed Cauliflower

1 carton of Sliced Baby Bella Mushrooms

6-8 teaspoons of Chicken Stock

1 Tablespoon of butter for mashed cauliflower

1-2 teaspoons butter or other preferred oil for mushrooms

1-2 Tablespoons of Everyday Seasoning for the steak and 1-2 teaspoons for the mushrooms

1 Tablespoon of Red wine if opened nearby
