Quick and Easy Kabobs

We love a kabob dinner, but I'll be honest, I can't stand the marinating process and then threading the sticky marinated meat on the skewers. I always end up poking myself and cursing the skewers. So, I was beyond excited to see these brand new, already marinated kabobs in the refrigerated section at Trader Joe's. The question was, will they be any good? The flavor and ease of these kabobs surpassed my expectations. They were so simple and so tasty.





To begin, you can either choose chicken, beef, or both. My family voted for both this evening. The Thai Style Coconut Marinated Kabobs are chicken thighs, so they hold up well on the grill. They have a sweet coconut flavor but not overpowering with just the tiniest hint of heat. The Savory and Sweet Marinated Beef Kabobs were exactly as advertised....savory and sweet and incredibly delicious. My kids preferred the chicken, whereas Mike and I preferred the beef. The real winner for dinner was the delightful veggie kabobs on the side!!


I started by preheating the grill to medium-high heat. It fluctuated from 350-400 once heated. While the grill was preheating, I let the meat come to room temperature. Next, I lightly sprayed the veggie kabobs with TJs Avocado Oil Spray and seasoned them with TJs Everyday seasoning. I then placed all the kabobs on the grill. I cooked each of the kabobs for about 3 minutes on each side.





While the kabobs were cooking, I steamed some TJs Jasmine rice in my Insta-Pot. As always, I rinsed my rice, sautéed one Tablespoon of butter and a cube of frozen garlic. Then I tossed in the rinsed rice and thoroughly mixed it with the butter and garlic to coat. Once the rice was started to turn golden, I added equal parts of TJs Organic Chicken Stock and turned the cooker setting to "rice."





Once the kabobs had cooked on all four sides, I removed them from the grill and let them rest for a few minutes at room temperature. While they were resting, I plated the rice, which served as a bed for the kabobs. This dinner was on the table in less than 30 minutes and was devoured by all. I hope you grab these and enjoy them as much as we did!
