Pomegranate and Pecan Green Salad

This salad is my most favorite salad, but in addition to it being delicious, it is so festive looking for the holidays. On a "normal" day, I like to serve this in a bowl but typically for Christmas day, I prep the salad on a large round platter but leave the center open a bowl of the dressing. This allows the salad to resemble a wreath and is just gorgeous!




I start by prepping my greens. I like to pour the baby spinach and butter lettuce in a large bowl and roughly chop the greens. This way, no one struggles with greens hanging out of their mouth at the table. If you are dressing the salad, go ahead and do that now. Toss the greens well to thoroughly combine.





Then, dice your avocado and gently toss through the greens. Next, sprinkle the Goat cheese, TJs Candied Pecans, and Pomegranate Seeds on top.


Trader Joe"s used to have the most spectacular Champagne Vinaigrette, although it has been gone for quite some time. So instead, you can dress this with your favorite TJs dressing, or I typically pick up Girard's Champagne Vinaigrette.




Pomegranate and Pecan Green Salad


1 bag of TJs Organic Baby Spinach

1 bag of TJs Butter Lettuce

1 Avocado diced

1/2 cup TJs Pomegranate Seeds

1/2 cup TJs Candied Pecans

1/2 cup TJs Crumbled Goat Cheese

Dressing of choice or your favorite champagne vinaigrette
