Savory Spinach Pie

Savory Spinach Pie might be my son's most favorite "comfort" meal. My mother originally invited it, and we have adapted it over time to fit our tastes and needs. This "pie" takes a bit of time to bake but can easily be made ahead of time and reheated as it tastes just as good (or maybe even better) the next day. It can be made gluten and dairy-free, or you can fully indulge with all the "real" ingredients!! If you struggle to get your family to eat leafy greens, this meal is for you.




Start by pouring 3/4 of a 16oz bag of TJs Organic Chopped (frozen) Spinach into a large bowl. Add in approximately one cup of TJs Shredded Potato Hash Browns. If you are in a hurry, place this bowl in the microwave and thaw these ingredients. I typically cover these with a paper towel and let them thaw on my counter while I finish other projects around the house. Once this is thawed, it is time to chop of the rest of your ingredients.


We like to use ham in this savory pie but honestly, you can use almost any protein. Examples that I have used in the past are chopped-up chicken sausage, pancetta, bacon, diced-up chicken breast, or anything I have leftover in the refrigerator. For this night, I chopped up the slices of two packages of TJs Organic Uncured Black Forest Ham.


Next, I like to use the already chopped TJs Diced Yellow Onions and sauté the onion in a teaspoon of butter until translucent.





Finally, chop up the artichoke hearts and add them to the bowl. Stir these ingredients to incorporate.




Then, add your shredded "cheese" of choice. We like to use the TJs Dairy-Free Mozzarella Style Shreds, which is a cashew cheese, but if you don't have dairy issues, the TJs Shredded 3 Cheese Blend is delicious in this "pie." Next, season with a half teaspoon of salt and a quarter teaspoon of TJs Everyday Seasoning. Then add in 4 whisked large eggs and stir until thoroughly combined.




If you are using the TJs Gluten-free pie shells, this will fill two pie shells. If you are using a regular TJs pie shell, it will be a "full" pie.




Place your pie/pies in a preheated 375 oven for approximately 55 minutes. Let it rest for about 5 minutes, then slice like a pie. I hope you enjoy this savory comfort meal as much as my family does!!





Savory Spinach "Pie"


1 Package of 2 TJs Gluten-free pie crusts (or 1 regular TJs pie crust)

3/4 of a package of frozen TJs Organic Chopped Spinach

1 cup of TJs Shredded Potato Hash Browns

1 cup sautéed onions

1 teaspoon butter

2 Packages of TJs Organic Black Forest Ham (or your choice of meat)

1 can of TJs Quartered Artichoke Hearts

1/2 cup of shredded "cheese" (Use cashew for dairy-free or TJs Shredded 3 Cheese Blend for you lucky souls who can still eat cheese comfortably!)

1/2 teaspoon salt

1/4 teaspoon Everyday Seasoning

4 whisked large eggs
